In my latest post, I want to share about a typical cake in my hometown.
My
hometown is Pekanbaru . It is the capital of Riau, a province in Indonesia on Sumatra
Island. Riau is very thick with the influence of Malay culture. It has many kind of typical food. One of them is
Bolu Kemojo. It is a typical cake from Riau. It is usually served on special
events such as Eid Fitri. Do you know how to make it? I think it’s just some people who know how to make it. Now, i want to give you a recipe of Bolu Kemojo.
- 6 eggs
- ½ teaspoon salt
- 700 ml. Coconut milk
- 250 gr. Sugar
- 300 gr. Flour
- 200 gr. Margarine melted
- ½ teaspoon pandan paste
- ½ teaspoon vanilla powder
- 2 drops of green dye
Steps:
Mix eggs, sugar and salt until the sugar to dissolve. Add
coconut milk into the dough while stirring slowly. After that, put flour and
vanilla powder while stirring gently. Then, add Margarine melted, pandan paste
and green dye while stir well. Preheat cookie cutters bingka. After the cookie
cutter heat, base with baking paperand then put the dough. Bake at 170 degrees Celsius for 75 minutes. Let the cake cool for 2 minutes and ready to be served.
Note:
More delicious eaten with tea while warm
This cake can be added some taste such as durian, chocolate, etc.
